Avocado Toast with Scrambled Eggs

Scrambled Eggs on Avocado Toast

Ingredients


• 2 slices of whole grain bread

• 1 ripe avocado

• Salt and pepper to taste

• 2 large eggs

•. 1 Radish(sliced)

  • 1 tablespoon butter or olive oil

• Optional toppings: chopped fresh herbs (such as chives or parsley), red pepper flakes, or feta cheese


Instructions:


1. Avocado Toast:

Toast the bread slices until golden brown.

Cut the ripe avocado in half and remove the pit. Scoop out the avocado flesh into a bowl and mash it with a fork until creamy.

Spread the mashed avocado onto the toasted bread slices. Sprinkle with salt and pepper to taste.Optional: Add toppings like chopped fresh herbs, red pepper flakes, or crumbled feta cheese for extra flavour.



2. Scrambled Eggs:

Crack the eggs into a bowl and whisk them until well beaten. Season with salt and pepper. Heat the butter or olive oil in a non-stick skillet over medium heat. Pour the beaten eggs into the skillet and let them cook for a few seconds until they start to set around the edges. Using a spatula, gently scramble the eggs by pushing them from the edges towards the center. Continue stirring and folding until the eggs are mostly cooked but still slightly runny.Remove the skillet from heat while the eggs finish cooking from the residual heat. They should be soft and creamy, not dry and overcooked. Season the scrambled eggs with additional salt and pepper if desired.

3. Serve:

Place the scrambled eggs on top of the avocado toast slices.Optionally, garnish with additional toppings like chopped fresh herbs, red pepper flakes, or crumbled feta cheese.

Serve the avocado toast with scrambled eggs immediately while warm.
