Quinoa with Stir-fry Vegetables

Ingredients:

1 cup cooked quinoa, 1 cup mixed vegetables (such as bell peppers, broccoli, carrots), 2 tablespoons low-sodium soy sauce, 1 tablespoon sesame oil, 1 clove garlic (minced), 1/2 teaspoon grated ginger, 1 tablespoon chopped green onions.

Instructions: Heat sesame oil in a skillet over medium heat. Add minced garlic and grated ginger, sauté for a minute until fragrant. Add the mixed vegetables and stir-fry until crisp-tender. Add the cooked quinoa and stir in the soy sauce. Cook for an additional 2-3 minutes. Serve hot And enjoy your Quinoa with Stir-fry Vegetables!
